The Learning Goals for our Literacy Unit:
To create the success criteria, Ben and I put up some work samples from a previous year. We then asked the students to help me find what is good/strong about each piece, and what is missing or needed improvement in each piece. I usually start with a weaker piece, since I have found that students have a hard time determining what is strong or good about a piece unless they see a piece that is weak. Here is one lesson where we worked through 2 samples to determine what our success criteria for a Relate/Reflect piece (essentially a reading response that incorporates making inferences and connections at a higher thinking level):

After creating the success criteria together, we spent a few lessons having the students analyze work samples, including their own, for the success criteria. They were asked to find each criteria and highlight it or label it. We did one together:
